Ichiran is very popular and famous Tonkotsu ramen shop. It is originally from Fukuoka prefecture which is in Kyushu island. Although you can eat at many places in Tokyo, too. I took my friends from Taiwan, France, Germany, and USA, and all of them love it!! This is definitely on my list where I would take anyone if I have some guests from other countries.
*NOTE* this is Tonkotsu ramen, so a soup is made by pork. Just let you know in case of you don’t eat pork or any meat, and etc.
Order Sheet
First, you need to fill out a order sheet. There are not only Japanese, but also English so if you read this article you would be fine 😉
There are many items that you need to choose (circle), if you don’t know, just go with “medium” which is standard.
Some of things that I would just let you know is “Original Spicy Red Sauce” is spicy. I would recommend you to make it less or medium if you don’t like spicy food like me. In addition, “Chashu” is pork as it says. There is “non-pork” Ichiran in Shinjuku which would be better for you if you don’t eat pork.
Buy a ticket
I would recommend you to get “Ramen” (Top row, second from left). And maybe an egg if you are not scared of eating half-raw yolk which i love.
Wait in line
You can check the panel which shows availability/unavailability. But don’t worry, they would let you know if it is your turn to have a seat.
Have a seat – Private space
Once you sit down, a sever would come in front of you (but you have a curtain so you cannot see their faces), you need to give them your order sheet.
And then just wait.. Oh you can get a water, help yourself.

Check the backside of paperback of chopsticks, or you can find the additional order sheet at table.
You need to mark (circle), prepare cash, put them in front of you, and push the button at the table. They would come get your order.
Kaedama
We call second noodle “Kaedama”. If you ask them for it, they would bring it to you. But this is ONLY noodles, so you should keep your soup left.
Souvenir
Some of you might love it as you want to bring it back to your home.. Good news is you can buy their instant ramens. You can buy them at shop, and also you can get at Don Quijote.
*NOTE* Some of countries forbid you to bring some food including broth by meat.
